Mom’s Apple Crisp

I love this PC recipe! It is good and easy. Not much of a healthy one though. This is one for a pitch-in. 
Mom’s Apple Crisp

8-12 Granny Smith apples
16 graham crackers (2 1/2 x 5 in.) , finely chopped
1 1/2 cup packed brown sugar
1 cup all-purpose flour
1 cup quick or old-fashioned oats
2 tsp. cinnamon
1 tsp. nutmeg
1 cup butter, melted

1. Peel, core, and slice apples. Cut apples in half; place in 13×9 casserole dish (I use my PC Deep Dish Baker).

2. Finely chop graham crackers using Food Chopper (or put in bag and pound with rolling pin); place in big bowl. Add brown sugar, flour, oats, cinnamon, and nutmeg; mix well. Melt butter and add it to the bowl and mix well.

3. Sprinkle graham cracker mixture evenly over apples. Microwave on high for 12-15 minutes or until apples are tender, rotating dish after 6 minutes.

You must have a big microwave to cook this and even though you cook it in the microwave, it still comes out yummy and a little crunchy. You can add whipped cream or ice cream! It is a wonderful dish for fall.

Yield: 20 servings
