Chocolate Chip Coconut Cookies

When I am surfing my fav. food blogs and my tummy is rumbling… recipes like this makes my mouth water! 

Chocolate Chip Coconut Cookies
(from Carrie’s Cooking Adventures)

1/2 cup butter
1/2 cup white sugar
1/4 cup light brown sugar
1 eggs
1/2 teaspoon vanilla extract
1 cup and 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips (or butterscotch)
1 cup flaked coconut

Preheat the oven to 375 degrees F (190 degrees C).

In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Fold in chocolate chips and coconut. Drop by rounded spoonfuls onto cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
