Simple Turkey Chili

1 tablespoon canola oil
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1/2 pound ground turkey breast
1 can (15 oz.) diced tomatoes
1 can (15 oz.) white beans, drained and rinsed (I used navy beans)
2 cups chicken broth
1 tablespoon chili powder
1/2 teaspoon cumin
1/4 teaspoon red pepper flakes
1/2 teaspoon dried oregano
salt and pepper

Heat the oil in a big pot over medium-high heat. Add the onion and cook for 3 minutes. Add the garlic and cook for another 2 minutes. Stir in the tomato paste, and keep stirring ’til the onions are red. Then add the turkey and cook until it starts to brown.

When the turkey is pretty well cooked, pour in the diced tomatoes, beans, and chicken broth. Stir it all up, and add all the spices. Let the chili simmer, uncovered, for 20-30 minutes. Add salt and pepper to taste. Serve.

Makes 3-5 servings, depending on how much of a pig you are. Keeps well in the ‘fridge for leftovers.
