Valentine Goodies!

Two great, chocolate recipes!

5 Minute Fudge(adapted from Rachael Ray)

1 (12-ounce) bag semisweet chocolate morsels
9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 cup chopped pecans
 8X8 cake pan, lightly greased with softened butter
Place a heavy pot on the stove and preheat it over low heat.
Add chips and milk and stir until chips are melted and milk combined. Stir in vanilla and remove fudge from heat.
Add nuts and stir in immediately. Spoon fudge into pan and make smooth.
The fudge will set up almost immediately. Chill covered in the refrigerator and slice fudge into SMALL squares when ready to serve, a little goes a long way.


 Chewy Peanut Butter Brownies with Chocolate Chips
(from Jumbo Empanadas)

1/2 cup peanut butter
1/3 cup butter, softened
2/3 cup white sugar
1/2 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips

Preheat oven to 350 degrees F (175 degrees C ). Grease a 9×9 inch baking pan.

In a medium bowl, cream together peanut butter and butter. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended. Add in chocolate chips.

Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.
