Jenny’s Banana Bars
½ cup butter or margarine, softened
1 ¼ cup sugar
1 tsp. vanilla
1 cup mashed ripe banana (about 2 large)
1 8oz. container sour cream
2 cups flour
¼ tsp. salt
1 tsp. baking soda
1 cup pecans (optional)
Grease and lightly flour 10X15″ jelly roll pan (cookie sheet), preheat oven to 375 degrees. Cream butter and sugar, blend in eggs, vanilla, sour cream and bananas. Combine dry ingredients; stir into creamed mixture JUST UNTIL BLENDED. Spread in pan and bake approximately 25 minutes. Cool, frost and gorge (Jenny’s directions – not mine. I follow them to a “t” though – I’m compulsive that way!).
Jenny makes the following Cream Cheese Frosting:
About 6 oz. cream cheese, 3 tbsp of softened butter, 1 tsp. vanilla, 1 tbsp milk and about 2 or 3 cups of powdered sugar (depending on the consistency you want). Blend and spread.
