Easy Chili

I love chili, even when it is warm outside!

Easy Chili
(from Phe/MOM/enon)

3/4 pound ground beef or turkey
1 teaspoon canola oil
2 cups water
1 1/2 cups frozen whole-kernel corn
1 cup of your favorite salsa
2 Tablespoons chili powder
1 Tablespoon sugar
2 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon salt
1 (16-ounce) can dark red kidney beans, drained and rinsed
1 (16-ounce) can chili beans, undrained
1 (14.5-ounce) can no-salt-added diced tomatoes, undrained

Cook the ground beef or turkey in a large Dutch oven or pot that has been oiled with the canola oil. Cook over medium heat until beef or turkey is browned and cooked through, stirring occasionally.

Stir in the water and remaining ingredients; bring the mixture to a boil. Reduce heat; simmer over low heat 25 minutes, stirring occasionally.

– Makes approximately 6 servings (about 1 cup each) –
