Flourless Peanut Butter Banana Chocolate Chip Cookies

    1 cup peanut butter (chunky or creamy)
    3/4-1 cup vegan white sugar (adjust to your sweetness preference)
    1 small-medium very ripe banana, mashed or pureed (should have black spots)
    1 teaspoon baking soda
    1/2 teaspoon vanilla
    3/4 cup vegan chocolate chips

Directions:

Besides being easy, this is SOOO good. Peanut Butter, Banana, Chocolate…how can you go wrong?

1. Preheat oven to 350 degrees F. Mix everything except the chocolate chips in a food processor until well combined. Stir in chocolate chips.

2. Using moistened hands, form generous 1 tablespoon (use more if you want bigger cookies) dough for each cookie into ball. Arrange on 2 ungreased baking sheets, spacing 2 inches apart.

3. Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes. Cool on sheets 5 minutes. Transfer to racks; cool completely.

And ta-da! There you have it. Delicious, flourless, easy cookies! Also, they are very good if you do half chocolate chips half raisins. Hope you enjoy!!

Serves: Makes about 24 cookies (if you like “normal sized” cookies

Blueberry Pumpkin Muffins

Blueberry Pumpkin Muffins

(from Genesis of a Cook)

3/4 cup flour
3/4 cup quick cooking oats
2/3 cup sugar
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. nutmeg
1/2 cup canned pumpkin
1/2 cup milk
1 egg
1/4 cup butter, melted
3/4 cup fresh or thawed blueberries

1. Preheat oven to 400 degrees. Grease and flour muffin pans or use paper liners.

2. In a mixing bowl, mix together the flour, oats, sugar, baking powder, salt, cinnamon and nutmeg until evenly blended.

3. In a separate bowl, stir together pumpkin, milk, egg and butter. Gradually add in the flour mixture, just until all ingredients are moistened. Fold in the the blueberries. Spoon matter into 12 muffin cups, filling to the top.

4. Bake for about 20 minutes, then cool for 10 minutes

Chewy Brownie Peanut Butter Chip Cookies

Baking Bites does it again! Another yummy recipe!

Chewy Brownie Peanut Butter Chip Cookies
2 cups all purpose flour
2/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter
1 cup sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups combo of chocolate chips and peanut butter chips*
*or chopped up peanut butter cups

Preheat oven to 350F and line a baking sheet with parchment paper.
In a medium mixing bowl, whisk together flour, cocoa powder, baking soda and salt.
In a large mixing bowl, cream together butter and sugars until fluffy. Beat in the eggs and vanilla. With the mixer on low, beat in the flour mixture, scraping the sides of the bowl as necessary, and continue to beat until all of the dry mix has been incorporated. Do this slowly to avoid dusting your kitchen with flour and cocoa. Stir in chips and/or peanut butter cups by hand.

Drop dough by rounded tablespoons onto the prepared baking sheet (dough balls were a bit larger than 1 inch in diameter). Leave about 2 to 3-inches between cookies to allow for spread.

Bake for 9-11 minutes, until cookies are set at the edges and tops are slightly cracked looking. Cool on baking sheet for 5-10 minutes, until firm enough to transfer to a cooling rack.
Cool completely before storing in an airtight container.

Makes about 4 dozen.

Chocolate Peanut Butter Cup Cookies

Peanut Butter Candy Cookies

1 cup salted butter, softened
1 cup peanut butter, creamy or chunky
1 1/2 cups white sugar
2 tablespoons of molasses
2 eggs
1 tsp vanilla extract
2 1/3 cups all-purpose flour
1/3 c cocoa powder
1 tsp baking soda
1 cup semisweet chocolate chips
1 cup peanut butter chips
1 cup Reese’s Pieces
1 12 oz package mini Reese’s peanut butter cups, cut into half and frozen.

Unwrap the Peanut Butter Cups and cut into halves. Place in a bowl and put in the freezer while you make the dough.

Preheat oven to 350 degrees. Cream butter, peanut butter, sugar, and molasses until smooth, about 3 minutes. Add vanilla and eggs, one at a time, until well incorporated.

In a separate bowl, sift together flour, cocoa powder, and baking soda. Slowly add dry ingredients to the peanut butter mixture. Stir in the chocolate chips, peanut butter chips and Reese’s Pieces.

Drop the dough by tablespoons onto cookies sheets lined with parchment. These cookies do not spread much, so only an inch apart is necessary. Remove the frozen peanut butter cup halves from the freezer and press one or two pieces onto the top of each dough ball.

Bake for 8 to 10 minutes. Let the cookies cool for at least two minutes before removing with a spatula to a wire cooling rack.

Donuts!

I actually love donuts (who doesn’t), but I stay away from them (very far away). I had to share these donut recipes though because I know there are some of you out there that can enjoy a donut or two and not hate yourself in the morning or see the scale rise. I, however, am not that lucky. So, enjoy and stuff one for me!

 Peabody had a homemade doughnut event on her blog. She was blown away by all the yummy recipes that were shared. Here are my favorites!

Easy One-Bowl Brownies

Easy One-bowl Brownies

  • 1 cup / 8 fl. oz. melted butter
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 2/3 cup of cocoa powder (I use Cadbury’s Dutch processed)
  • 1 cup flour
  • 1/2 tsp salt
  • Walnuts / pecans, chopped (optional)
    • Pre-heat oven to 190C/375F. Butter a 9×13 baking pan for thinner but good size brownies or a 9×9 dish for thicker brownies. Dust the pan with cocoa as you would flour. Melt butter in large bowl and beat in sugar (I do it by hand) until well mixed. Add vanilla then the eggs one by one until well incorporated. Add all the dry ingredients and mix until combined. If using the nuts, blend in at this point. Pour into pan and bake for about 35-40 minutes or until edges are done and middle is slightly gooey. Let stand for about 15 minutes and slice. These are delicious enough to be served as is, or top with whipped cream or ice-cream. Can’t go wrong!

      Valentine Goodies!

      Two great, chocolate recipes!

      5 Minute Fudge(adapted from Rachael Ray)
      (from Cooking is Medicine)

      1 (12-ounce) bag semisweet chocolate morsels
      9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
      1 (14-ounce) can sweetened condensed milk
      1 teaspoon vanilla extract
      1 cup chopped pecans
       8X8 cake pan, lightly greased with softened butter
      Place a heavy pot on the stove and preheat it over low heat.
      Add chips and milk and stir until chips are melted and milk combined. Stir in vanilla and remove fudge from heat.
      Add nuts and stir in immediately. Spoon fudge into pan and make smooth.
      The fudge will set up almost immediately. Chill covered in the refrigerator and slice fudge into SMALL squares when ready to serve, a little goes a long way.

       Chewy Peanut Butter Brownies with Chocolate Chips
      (from Jumbo Empanadas)

      1/2 cup peanut butter
      1/3 cup butter, softened
      2/3 cup white sugar
      1/2 cup packed brown sugar
      2 eggs
      1/2 teaspoon vanilla extract
      1 cup all-purpose flour
      1 teaspoon baking powder
      1/4 teaspoon salt
      1 cup chocolate chips

      Preheat oven to 350 degrees F (175 degrees C ). Grease a 9×9 inch baking pan.

      In a medium bowl, cream together peanut butter and butter. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended. Add in chocolate chips.

      Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.

      Fried Apple Pies

      These are not the healthiest treat, but my grandma used to make fried pies, peach ones to be exact. I looked forward to them everytime she made them! 

      Fried Apple Pies
      (from Momma’s Cookbook)
       
      2 cups all-purpose flour
      1/2 cup shortening
      1 teaspoon salt
      1/2 cup cold water
      2 apples
      1/3 cup white sugar
      1/2 teaspoon ground cinnamon
      1 cup vegetable oil

      DIRECTIONS

      1.Peel and dice apples. Add sugar and cinnamon. Cook in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce.
      2.Sift flour and salt together. Cut in the shortening. Add water and mix with fork.
      3.Roll out to about 1/8 inch thick on a floured board. Cut with a large cookie cutter (4 inches in diameter).
      4.In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold and press edge with a fork.
      5.Heat oil in a large skillet on medium-high heat. Fry pies, a few at a time, 2 to 3 minutes on each side; cook until golden brown. Drain on paper towels. Sprinkle with confectioners sugar.
